"I’ve hauled cattle for these people, and I wanted to see what their product was about. I ordered the flat irons and few other cuts. Being in the cattle business myself, and selling a fair amount of meat myself, I was really excited to give this a try. I pan fried these steaks in a cast iron skillet with hot butter, a dash of rosemary and thyme, and little of my favorite seasoning. I rested the steaks about 10 minutes before I cut into them. Cooked to medium rare, these steaks were tender, flavorful, and of excellent texture. I’ve eaten steaks from New Jersey to Cali, And you people have got a winner here. Congrats. Quality doesn’t cost, it pays."
